Very Vanilla Moist Cupcakes

This recipe is my go to vanilla recipe for cupcakes. After tweaking many recipes in search of the perfect one, I discovered that this combination will yield to light, moist and fluffy cupcakes. The perfect pairing in my opinion would be delicious cream cheese frosting, it’s always been a definite crowd pleaser.sprinklescut

For Cupcakes
  1. 1 1/2 cups flour
  2. 1 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1/4 tsp salt
  5. 2 eggs
  6. 2/3 cup sugar
  7. 1/2 cup oil
  8. 1 tbs vanilla extract
  9. 1/2 cup buttermilk
Instructions
  1. Preheat the oven to 350 F. In a bowl mix flour, baking powder, baking soda and salt.
  2. In a stand mixer beat eggs and sugar until foamy. Next add oil slowly and vanilla extract until incorporated. While mixing on low add half of the flour mixture and then some buttermilk on top and repeat until all mixed thoroughly.
  3. With an ice scream scoop, add batter into cupcake lined tins about 3/4 of the way full. Batter will be a bit runny so take your time not to spill.
  4. Bake cupcakes for approximately 16-18 minutes or until toothpick inserted comes out clean.
Notes
  1. If you do not have buttermilk, 2 tablespoons of vinegar mixed in milk can be used as a replacement.
